History time: This classic New Orleans dish dates back a few hundred years! Traditionally, this meal was made on Mondays, also known as wash days, when less time was spent in the kitchen and more time was spent cleaning. New Orleanians would use Sunday's lavish dinner leftovers, like sausage and other meats, and repurpose them. They added the meat to slow cooking red beans, which would simmer in a large pot all day, sometime 8 to 10 hours. A wide variety of warming cajun spices, such as cayenne, sage, and paprika, would simmer and bubble all day long. The scent would tantalize everyone for a delicious meal at the end of their Monday chores.

We start with the New Orleans' "holy trinity" or basics of cooking: onion, celery, and green pepper. After the fresh vegetables are diced and our spices are measured, everything goes in the pot. When cooked together, the smell itself will be sure to have you salivating. But hang on, not too fast! This dish takes time to simmer, so every bite is bursting with flavor.

Although not quite for 8 to 10 hours, our red beans and rice is slow simmered as well. It is filled with tasty and aromatic spices, and is dairy and meat free. We make the cajun dirty rice with many spices, fresh parsley, and green onion. The combination of the red beans and rice is mouth watering enough, but we top this meal with locally produced cajun sausage, made with pork and potatoes, sliced and seared to order. This dish is presented for both breakfast or lunch with two cage free eggs, served any way you like them.

Instead of a classic corn bread muffin, or traditional side of toast, we have created gluten free mini corn bread pancakes to compliment the red beans and rice. You can enjoy these either sweet with syrup, or savory, dipped straight into the beans! The choice is yours, but you really can’t go wrong with this soul-warming comfort dish that is completely gluten free.

This Red Beans & Rice dish is naturally dairy free, however the cornmeal pancakes contain dairy.

Uh YUM! This plate is piled high with two of our house recipe Liege style craft waffles with vanilla roasted pears, house made brown sugar butter, whipped cream & a dash of cinnamon. Yes please!

These waffles are made with a new Anna’s House original buttermilk craft waffle batter! They are prepared Leige style, which means each waffle comes out with it’s own unique personality and flair. They are still light, fluffy, and crisp, just like the waffles you grew up with, but with new dimension for a chewy, stretchy, and doughy feeling.

If you don't have a mega sweet tooth, no worries. You can try our new house made craft waffles in lieu of your regular Belgian waffle. Maybe dunk it in some Michigan made maple syrup, or eat it plain (trust us, it's that good).

Topped with a drizzle of yellow mustard and served with your choice of breakfast potatoes.
